“Nothing less than spectacular. Black, opaque, dense, tiñe las paredes de la copa con lágrimas de color chocolate. Complex nose full of spices (clove, nutmeg), tobacco, balsamic aromas (old furniture, incense, damp ebony wood) and a core of bitter Belgian chocolate from the best chocolatiers we can think of (I think of Pierre Marcolini!). There is something there that recalls the ancient tradition of Modena vinegars, from that long aging in wood (son alrededor de 80/90 años de edad promedio) with a dense palate that is not so sweet after all, and even has a salty touch (cracked peppercorns) and a tasty component that makes it very complete: a dessert on its own. It has balance within its powerful and concentrated style, which is the key to its greatness.
