Our Pedro Ximénez sweet wines are made from grapes dried on straw mats (paseras) under the intense Andalusian sun, concentrating sugars to 400+ g/L. After pressing, the must enters the Solera system for years — sometimes decades — of aging.
The result is a dark, syrupy wine with extraordinary complexity: fig, raisin, date, molasses, and a finish that lasts for minutes. Perfect poured over vanilla ice cream, with dark chocolate, or as a stand-alone dessert course.
